Tip 1. Choose Quality Ingredients

Tip 2. Marinate for Flavour
Marinating your meat is crucial for infusing flavour and tenderness. A good marinade can be as simple as a blend of olive oil, garlic, herbs, and a splash of acid like lemon juice or vinegar. Tip 3. Preheat the Grill
Always preheat your grill before cooking. This ensures that your food cooks evenly and helps to achieve those beautiful grill marks. For gas grills, preheat on high for about 10-15 minutes. For charcoal grills, wait until the coals are covered with white ash.
Tip 4. Let the Meat Sit
One of the most important tips I can share is to let your meat sit after grilling. Once you’ve removed it from the heat, allow it to rest for 5-10 minutes. This resting period lets the juices redistribute throughout the meat, resulting in a juicier and more flavourful bite.
Tip 5. Don’t Overcrowd the Grill
Avoid overcrowding the grill to ensure even cooking. Give each piece of food enough space to cook properly and to allow you to manage the heat more effectively. If necessary, cook in batches.
Tip 6. Use a Meat Thermometer
To achieve the perfect doneness, use a meat thermometer. This takes the guesswork out of grilling and ensures your meat is cooked to the desired temperature. For example, aim for 145°F for medium-rare steaks and 165°F for poultry.
Tip 7. Experiment with Wood Chips
Enhance the flavour of your BBQ by using wood chips. Different types of wood, like hickory, apple, or mesquite, impart unique flavours to your food. Soak the chips in water for about 30 minutes, then add them to your grill for a smokey touch.
