Truffles Fine Foods At The Honda Celebration of Lights

 

Nothing beats sitting down at the beach as the sun sets, enjoying appetizers and a buffet of good food, waiting for the music to start, and the anticipation of fireworks. Every summer, Vancouver residents and tourists alike gather around English Bay to watch some of the world’s best compete in a firework and music extravaganza. The Honda Celebration of Lights is a summer festival many eagerly anticipate all summer long.

This years competing countries are Japan (July 29th), the United Kingdom (August 2nd), and Canada (August 5th). The fireworks begin at 10pm each night. While there are plenty of free spots to watch the fireworks, there are also ticketed areas that ensure you get an ideal viewing location of the event. Truffles Fine Foods is proud to be a part of two of these ticketed areas. You will be able to find us both at the Concord Lounge and the YVR Business Class Cabanas.

The Concord Lounge will be located on on English Bay along the peninsula, and feature a hot and cold buffet along with two complimentary cocktails and a cash bar. Enjoy a laid back beach atmosphere with dinner and a prime view of the fireworks.

The YVR Business Class Cabanas will allow you to entertain up to 23 guests in a lounge that comes with complimentary appetizers and a cash bar service. Each cabana will have 200 square feet of dedicated space, and come with optional catering upgrades.

A DREAM COME TRUE WITH A VANDUSEN BOTANICAL GARDEN WEDDING

THE SAYING THAT “LOCATION IS EVERYTHING” is perhaps no more true than it is for wedding venues. No amount of creativity, decor, and picture-book ideas can compare to the beauty of a naturally-blooming garden on a sunny day. Working with La Vista Events, bride Elise knew exactly what she wanted for her July 2016 nuptials to her now-husband, Austin.

Hasti Maloufi, owner of La Vista, recalls the simple and straight-forward reason the couple chose to celebrate with a VanDusen Botanical Garden wedding: “[It] was the perfect backdrop to showcase Vancouver’s West-Coast style with features of large plant collections and lush greenery.”

Following the charming ceremony, guests were encouraged to explore the gardens while sipping cocktails and nibbling canapés prepared by the culinary team at Truffles Fine Foods. VanDusen’s Visitor Centre was transformed into a gilded wonderland of florals, twinkling lights, and garlands of greenery where the newly-married couple celebrated with a reception including all of their friends and family.

By shaking up the right combination of tantalizing tastes, a well-crafted cocktail can take any event from just alright to totally refined. AS WE PREPARE FOR THE SUMMER catering season, we asked our expert in-house mixologists three important questions about providing premium bar service to event guests, and what trends to look out for throughout 2017 and beyond.

1. Each year we see new trends with catering. What are some of your tips that are designed to “pack a punch” at the event bar and truly wow event guests?

As with food, you can’t beat using locally-sourced spirits, beers, and ingredients from right here in BC. We’ve got a very lively craft distilling scene with some fantastic offerings that have been bringing in awards from all over. We’re seeing a huge comeback for gin, being reinvented with citrus and earthy flavours that work incredibly well in a wide variety of cocktails. Another great idea to incorporate the local movement into your event’s premium bar service is by offering savoury cocktails using herbs from the local farmers’ market such as rosemary or basil.

2. Tell us three key things to keep in mind when providing premium bar service to event guests.

First of all, consider the food menu you’re planning to serve and make sure that the cocktails you choose will pair well. Work with your caterer and bartending staff to make sure that flavour harmony can be created. Second – and we can’t emphasize this enough – make a plan for the designated drivers and underage guests that will be attending. Providing non-alcoholic options for them will ensure that they also feel included. And lastly, don’t go overboard with the options. Too many choices on the cocktail menu can overwhelm guests. Pick a handful of great drinks that you know your guests will love, and make sure they’re made well.

3. What sets the premium bar service offered by Truffles and Lavish apart from others in the local industry?

By working together, we take a lot of the guess work out for our clientele. Our catering team and mixologists are true experts, and they’re experienced enough to know what will work well, what will go with your event’s theme or menu, and which ingredients are required to ensure that your guests have a memorable time. TOM COLLINS RECIPE

Like us, our mixologists are looking forward to the summer months. While there’s always a place for something new and inventive, our team also believes in showcasing the classics because, with those, you can never go wrong. In honour of the sunny days ahead, we’re sharing our recipe for a refreshing Tom Collins.

In a shaker, combine:

– 2 oz gin (we like the Wallflower gin from Odd Society in East Vancouver)
– 1 oz fresh-squeezed lemon juice
– ½ oz simple syrup
– 3 oz chilled club soda

Shake and pour in a tall glass over ice, garnish with a slice of lemon and a Maraschino cherry.

A meal that is nourishing and truly delicious will never go out of style, and it’s at the heart of every item our team prepares and serves. There are, however, many original and inventive ways to feed guests at an event, and keeping up with current catering trends is the smartest way to ensure that your gathering is one for the books.

We’ve rounded up the top 10 catering trends on the horizon for 2017 to help inspire our clients as we head into what is sure to be an incredible year.

1. Textured Buffets

Forget what you think you know about buffets and instead imagine this: a rich tapestry of vibrant colours, rolling hills of inventive platters, mouth-watering bowls brimming with hearty soups and homemade sauces, and towering dishes adorned with all of your favourite foods. Flat buffets that stretch as far as the eye can see have been done again and again and again. 2. Herbaceous Cocktails

We’ll always keep a place in our hearts for classic cocktails like an Old Fashioned, but there’s no denying the trajectory that the craft cocktail scene has taken in recent years. Shaking up creativity behind the bar with a twist for 2017 means taking organic herbs and pouring out something that plugs into the locavore movement. How about a rhubarb-basil cocktail, lavender lemon drop martini, or a rosemary gimlet? The possibilities are truly endless!

3. Local Pairings

In keeping with the locavore theme, we say two is always better than one. Look no further than your own community for the perfect pairing. Perhaps our favourite catering trend is creating a dangerously delicious duo from the local culinary scene. A great menu is key, but what is one thing clients often overlook when planning their corporate events?

Sometimes clients don’t realize the amount of time necessary to pull off a stellar event. Setting up and tearing down absolutely needs to be accounted for when planning your event’s timeline. It’s also a good idea to find out whether or not the venue will set up tables and chairs, or if it’s something you’ll need the caterer to do. Another thing that’s often overlooked is maintaining the catering, such as at a food and beverage area. When clients request a sandwich bar for a workshop, for example, they’ll need to have staff on-site to refill condiments, set out clean dishes, and refresh the toppings throughout the event.

I also can’t stress enough how valuable it is to your guests to inquire whether or not any of them have food restrictions. Your guests will appreciate that their needs are being considered and incorporated into the menu for the day. And, as they say, variety is the spice of life! If you’re planning a multi-day event like a conference, mixing it up each day will keep your guests on their toes. For an event that’s only a day in length, pick a lighter lunch and offer tantalizing appetizers and fresh-baked treats.

Just like Truffles’ clients, no two events are alike. How important is it to provide menu options that are flexible and able to suit everyone’s needs?

Like I mentioned, your guests will feel appreciated if you consider their tastes and dietary requirements. No two palates are alike either, so keeping your menu flexible will ensure happy guests! Make sure your caterer has a very clear understanding about the event you’re hosting – what’s it about? What kind of crowd are you including and what is the goal for the event? Will there be more men, more women, children attending, or a mix of all three? Believe it or not, these questions matter. This will help us determine what will work best for you, whether it’s a hot food buffet, if chef stations are an option, or that enough staff will be on-site to refill, replenish, and make sure everything is fresh and that presentation is consistently stunning!

What’s the most “stand-out” feature you’ve ever seen at a corporate event that Truffles Fine Foods has catered?

Our amazing staff created an ice bar for the 2010 Olympics with giant seafood on an ice station. It was really something! We also recently offered both a burger bar and sandwich bar, an ice cream station, and a chef station for some of our corporate clients.

We’ve seen a lot of really fun, fresh trends in the catering industry lately such as food trucks and self-serve stations – like Truffles’ burger bar! What kind of trends do you see on the horizon for corporate catering in 2017?

A lot of small plates and tasting menus of multi-course meals. These offer not only some great food variety, but also allows our culinary team to play with seasonal food, creativity, and presentation. We’ve been staying away from big portions and breaking them into smaller portions with a highlight on presentation. This gives event guests a wider variety of things to try!

Wedding catering involves much more than simply food. Before you hire your wedding caterer, ask these 10 questions to keep your budget in check and ensure you’re getting exactly what you need.

ONE OF THE MOST MEMORABLE PARTS of any celebration with loved ones is the food. Whether it’s a seated meal or trays of canapés, food is what draws people together, and wedding catering is no exception. When thoughtfully planning the various details of a wedding, it’s easy to become overwhelmed.

Truffles Fine Foods has put together 10 questions to ask your potential caterer before you sign a contract. While some aspects may not seem important in the early stages of planning, by arming yourself with information, you’ll potentially save yourself a lot of stress down the road.

1. What is included in each catering package?

Any experienced wedding catering company will be able to provide a variety of catering packages tailored to suit different budgets, tastes, and styles. Some packages include the bare necessities while others are jam-packed with no detail overlooked.

Wedding catering is about far more than the food your guests will indulge in: consider whether table linens, cutlery, dishes, and glassware are included. Other costs, such as cutting the cake, coffee or champagne service, gratuities, service charges, setting up, tearing down, and even garbage and recycling fees may be à la carte add-ons – which can quickly cause your budget to balloon.

2. What’s in the small print?

Like any contract, the agreement you make with your wedding caterer is no different. Read the fine print and make sure you understand fully what you’re signing up for. Have your wedding caterer review the contract with you and make sure they clarify the payment schedule (such as a deposit – ranging from 25% to 75% of the total cost), the refund and cancellation policies, and other important details such as extra charges and gratuities that may – or may not – be included.

3. Where will the food be prepared, and is an on-site kitchen facility necessary?

Depending on the style of meal you’re planning to serve, your caterer may prepare the food in advance and transport it to your venue, or they may prepare it on-site. Confirm whether or not the caterer requires an on-site kitchen facility. Because cooking at the venue may require that a makeshift kitchen be built either inside or outside, this often incurs a greater cost, so clarify this detail with your wedding caterer as you review the budget.

4. Can the menu be adapted to include vegetarian, vegan, gluten-free, or other dietary requirements?

What’s good for one guest may not be good for all guests, and vice versa. It’s very likely that a handful of your guests will have unique dietary requirements, and accommodating those requirements is seen as thoughtful and considerate. When inviting your guests, ask what may be necessary for them and then discuss those with your wedding caterer to decide what options will be available for those guests.

5. Where is your food sourced?

The source of your menu’s ingredients is about more than global impact. Where the ingredients come from can also affect your budget as some caterers will charge extra for premium ingredients. Hoping for local or seasonal items? They may be more affordable but, again, a caterer may charge extra for their efforts to source with specific vendors, so decide in advance if this is important to you and whether or not you’re willing to pay extra.

6. What kind of licenses and insurance will you arrange?

Few weddings are complete without cocktails and dancing. Keep in mind that licenses, such as for serving alcohol or SOCAN, are a legal requirement for weddings that are held in public venues. Other requirements may vary depending on your municipality, so ask your caterer if they can arrange these for you – or point you in the direction of someone who can. If your caterer is supplying alcoholic beverages, confirm that your wedding caterer has both a business license and liquor license.

7. Are meals for children and other wedding vendors included and, if not, how are they priced?

Your photographer, videographer, and DJ (and their assistants!) need to eat too, and it’s a common courtesy to offer each of them a hearty meal. If you’ve encouraged guests to bring their children, the munchkins also have to eat. Some caterers may charge a reduced per-plate price for wedding vendors and underage guests, so confirm this with your caterer before they provide you with an estimate.

8. What will the catering staff wear?

Black bowties at a luau-themed wedding would be as out-of-place as Hawaiian-print shirts at a formal affair. Ensure your wedding caterer’s staff is dressed appropriately for the style and ambiance of your wedding.

9. What do you suggest?

Wedding catering companies do more than simply cook food and prepare meal. Chefs are artists and many relish the opportunity to highlight signature dishes or offer their suggestions for perfect pairings. If you’re unsure about any aspect of your menu, your wedding caterer is your best resource because they’re working from a place of experience and knowledge.

One of the best and most fun parts of wedding planning is deciding on the menu, something most couples do with a tasting. When your wedding caterer does a tasting with you, it’s a great opportunity to discuss your menu options in person, decide on a possible menu theme, and discuss any potential food restrictions. Be sure to ask your caterer if the tasting is complimentary or if there’s a charge for two (which is often deducted from the final invoice).

10. How far in advance to I need to confirm guest numbers and menu details?

Confirm with your wedding caterer how much notice they require with a final guest tally, and then provide your guests with an RSVP date based on that conversation. Your caterer will also want to have all your menu details approved and finalized at the same time. This step is vital to the caterer to ensure that the freshest ingredients are available while allowing for ample time to source any hard-to-find items that may be on your menu.
