THE TRUFFLES TEAM HIT ALL THE RIGHT NOTES AS THEY RECENTLY CATERED THREE LIVE NATION CONCERTS AT DEER LAKE PARK
Summertime is synonymous with outdoor concerts and festivals! Live Nation concerts at Deer Lake Park have become a “fan favourite” way to spend a sunny evening with some of the biggest music acts of today. The catering team at Truffles Fine Foods recently had the privilege to cater to three of those events, serving up an inventive and satisfying menu to rock royalty.
On May 28th, blues rock band Alabama Shakes took to the stage with their crew and special VIP guests. To keep the energy going all day long, we provided both lunch and dinner! Some highlights included:
Fish Tacos – Tilapia served with a twist of lime, cumin, fresh cilantro cream, and coleslaw
Beef Fajitas – Sliced and marinated beef tossed with sautéed bell peppers and onions
Truffles’ house-made Caesar salad with croutons, parmesan, and classic dressing
Fraser Valley Chicken Breast stuffed with spinach, roasted red peppers, and ricotta cheese
Squash Ravioli – an aromatic dish created with wild mushrooms and a sage-pecan truffle emulsion
A number of creative sides were also dished up, including Spanish rice, a steamed vegetable medley, beetroot & goat cheese salad, and no shortage of sugary-sweet dessert bars, squares, and homemade cookies.
Three days later, on May 31st, one of Britain’s most beloved rock bands, The Cure, swept into Deer Lake Park for a memorable evening. The band prepared for the show from morning until night, so to ensure that everyone was well fed, we created an eclectic spread of both exotic and local-centric fare.
Juicer Station – mixed whole fruits and vegetables were cold pressed and available all day long
Yogurt with seasonal berries and compote
Blackened Spice Rubbed Chicken – served with fresh tomatillo and salsa verde
Morrocan Quinoa Salad – stirred with dried fruit, nuts, and a touch of cinnamon in a cilantro vinaigrette
Roasted Wild B.C. Salmon – served with fennel dill slaw on the side
Creamy Mushroom Soup – slow-cooked with mixed mushrooms, celery, onions, garlic, cream, and fragrant rosemary
And endless array of side dishes were also available including a complete breakfast bar in the morning, seared vegetables, assorted soups, a selection of desserts, and an exotic fruit platter.
Lastly, folk rockers The Lumineers took the stage on June 1st and played through the gloomy weather to a crowd of brave fans. The rain didn’t get anyone down, least of all the Truffles team, as they prepared hearty dishes for the wet day ahead.
Warming oatmeal with toasty nuts, brown sugar, and maple syrup
Build-Your-Own-Sandwich Bar, stocked with creative toppings, an assorted meat platter, cheeses, and freshly-picked greens
Roasted Carrot and Brie Soup, simmered with carrots, shallots, garlic, onions, thyme, brie, and cream cheese
Grilled Striploin Steaks drizzled with a mushroom jus
Provencal Tomatoes baked and topped with fresh herbs and goat cheese
Exotic Kale Salad tossed with kalamata olives, chickpeas, feta cheese, tomatoes, dill, parsley, mint, and red onion
Those with a sweet tooth were also satiated at our decadent dessert bar, featuring chocolate ganache tarts, chocolate covered strawberries, and assorted French macarons.
