A ROUND-UP OF THE TOP 10 CATERING TRENDS FOR 2017

IN A CITY THAT IS AS INNOVATIVE and constantly evolving as Vancouver, the team at Truffles Fine Foods has its finger on the pulse of change. Catering trends come and go with each new year, depending on the kind of event and the guests that are being served.

A meal that is nourishing and truly delicious will never go out of style, and it’s at the heart of every item our team prepares and serves. There are, however, many original and inventive ways to feed guests at an event, and keeping up with current catering trends is the smartest way to ensure that your gathering is one for the books.

We’ve rounded up the top 10 catering trends on the horizon for 2017 to help inspire our clients as we head into what is sure to be an incredible year.

1. Textured Buffets

Forget what you think you know about buffets and instead imagine this: a rich tapestry of vibrant colours, rolling hills of inventive platters, mouth-watering bowls brimming with hearty soups and homemade sauces, and towering dishes adorned with all of your favourite foods. Flat buffets that stretch as far as the eye can see have been done again and again and again. Instead opt for multiple tiers, layering your caterer’s offerings at different heights to create contrast and texture.

2. Herbaceous Cocktails

We’ll always keep a place in our hearts for classic cocktails like an Old Fashioned, but there’s no denying the trajectory that the craft cocktail scene has taken in recent years. Shaking up creativity behind the bar with a twist for 2017 means taking organic herbs and pouring out something that plugs into the locavore movement. How about a rhubarb-basil cocktail, lavender lemon drop martini, or a rosemary gimlet? The possibilities are truly endless!

3. Local Pairings

In keeping with the locavore theme, we say two is always better than one. Look no further than your own community for the perfect pairing. Perhaps our favourite catering trend is creating a dangerously delicious duo from the local culinary scene. Your summer BBQ guests will be undoubtedly be wowed if you serve them up a pint of suds from Vancouver’s craft brewery scene with a Fraser Valley beef slider on the side. Keeping it kid-friendly? How about vanilla ice cream from the heart of Main Street garnished with mixed berries from Delta?

4. Interactive Foods

Allowing your guests to get interactive with how their food is prepared is Fun with a capital ‘F.’ While some of Truffles’ catering is often prepared on site, why not take it a step further and have our chefs showcase their culinary skills for your guests? Another option is to allow your guests to “play with their food,” so to speak. Ask us to creatively provide garnishes and sauces on the side, allowing your guests to add the finishing touches themselves. This is especially welcome when anything chocolate is involved.

5. Small, Deconstructed Plates

The beauty in serving smaller plates is that it allows your guests to enjoy a wider variety of foods, textures, and tastes. By deconstructing those smaller plates, it allows your guests to see and understand why the dish tastes the way it does. Sometimes by taking a classic dish and re-arranging it, our team creates a new way of experiencing something iconic and making it new again.

6. Heritage Dishes

If you’re planning a wedding or a family reunion, this is an option we’d love to help you bring to life. Whether two lives are joining, or multiple families are celebrating, by incorporating heritage dishes you can beautifully honour each of your guests. Did your grandmother make a mouth-watering pasta that was a huge part of family gatherings during your childhood? Or maybe dad’s incredible stock pot of ramen was what brought everyone together on Sunday evenings. There’s an intrinsic link between food and memories, and we’d love to help recreate those dishes to add a touch to your event that is unique and only yours.

7. Raw Vegetables

There’s no denying that we’re living in an increasingly health-conscious society. Providing options that are gluten-free, vegetarian, and even vegan are considered standard at nearly any event. There’s little that’s inspiring about a chopped veggie stick platter with dip, so instead consider a kaleidoscope of colour with sliced kohlrabi, lengths of vibrant carrots, bite-sized radishes, and leaves of lacinato kale to wrap them all up with. Boost your raw vegetable game by offering an assortment of homemade drizzles and sauces: think miso-ginger or fruit-fusion vinaigrettes.

8. Roaming Dessert Carts

Remember how fun it was to chase after the ice cream truck as a child? Bring that thrill into adulthood with what might just be our favourite catering trend. Instead of having guests line up a dessert bar, bring the sweets to them – toute suite! A roaming ice cream cart or trolley of mile-high donut towers is sure to get any guest’s sweet tooth salivating.

9. Family-Style Dining

Over the years, we’ve seen this one come and go, but there are few experiences that can be compared to enjoying a family-style meal with friends and loved ones. Because a plated dinner may be too formal, or a buffet meal too impersonal, nothing says “welcome!” like gathering around a platter of tender chicken, bowls of roasted-to-perfection vegetables, and fresh rolls so warm they’re still steaming. Reminiscent of family dinners around the kitchen table, family-style dining reminds us why there’s no sincerer love than food.

10. Crostini Bars

Shhhh… this is our little secret! Crostini bars have been popping up and are shaping up to one of the truly tastiest catering trends this year. A crispy, savoury blank canvas, crostini will let your guests’ creativity flow as they top them with an assortment of cheeses, chutneys, fresh herbs, cured meats, and viscous drizzles. Combining the convenience of a food bar with the trend of interactive foods, this is a fantastic way to compliment your event’s appetizer round.

WHETHER YOU’RE LOOKING TO incorporate one of these catering trends into your next event, or to set a new trend entirely, Truffles Fine Foods will make it happen. To learn more about our extensive and creative catering options, please contact our team today!

VANCOUVER CORPORATE CATERING: SPICE IT UP!

[spb_column width=”2/3″ el_position=”first”] [spb_single_image image=”2156″ image_size=”large” frame=”noframe” intro_animation=”none” full_width=”no” lightbox=”yes” link_target=”_self” width=”1/1″ el_position=”first last”] [blank_spacer height=”30px” width=”1/1″ el_position=”first last”] [spb_text_block pb_margin_bottom=”yes” pb_border_bottom=”no” width=”1/1″ el_position=”first last”]

Take your Vancouver corporate catering to the next level with our tips and ideas.

FOOD INSPIRES US, IT energizes us, and it nourishes us. Ask anyone what part of an event they most look forward to, and the meal is usually at the top of the list. However, anyone that’s ever been to a corporate lunch, all-day workshop, or staff meeting will tell you they’ve seen the same tired offerings again and again.

Truffles Fine Foods’ in-house culinary team has always prided itself on imagining exciting menus, thoughtfully tailored to each client’s needs. For more than a decade, we have been dedicated to providing the very best in the industry, setting us apart as a corporate catering leader. It takes more than fresh ingredients and creativity to captivate our clients’ taste buds, so we chatted with Fanny Dufour, Truffles’ Marketing and Business Manager, to get the low-down on how Truffles Fine Foods has excelled at corporate catering and how the team can take your event to the next level.

A great menu is key, but what is one thing clients often overlook when planning their corporate events?

Sometimes clients don’t realize the amount of time necessary to pull off a stellar event. Setting up and tearing down absolutely needs to be accounted for when planning your event’s timeline. It’s also a good idea to find out whether or not the venue will set up tables and chairs, or if it’s something you’ll need the caterer to do. Another thing that’s often overlooked is maintaining the catering, such as at a food and beverage area. When clients request a sandwich bar for a workshop, for example, they’ll need to have staff on-site to refill condiments, set out clean dishes, and refresh the toppings throughout the event.

I also can’t stress enough how valuable it is to your guests to inquire whether or not any of them have food restrictions. Your guests will appreciate that their needs are being considered and incorporated into the menu for the day. And, as they say, variety is the spice of life! If you’re planning a multi-day event like a conference, mixing it up each day will keep your guests on their toes. For an event that’s only a day in length, pick a lighter lunch and offer tantalizing appetizers and fresh-baked treats.

Just like Truffles’ clients, no two events are alike. How important is it to provide menu options that are flexible and able to suit everyone’s needs?

Like I mentioned, your guests will feel appreciated if you consider their tastes and dietary requirements. No two palates are alike either, so keeping your menu flexible will ensure happy guests! Make sure your caterer has a very clear understanding about the event you’re hosting – what’s it about? What kind of crowd are you including and what is the goal for the event? Will there be more men, more women, children attending, or a mix of all three? Believe it or not, these questions matter. This will help us determine what will work best for you, whether it’s a hot food buffet, if chef stations are an option, or that enough staff will be on-site to refill, replenish, and make sure everything is fresh and that presentation is consistently stunning!

What’s the most “stand-out” feature you’ve ever seen at a corporate event that Truffles Fine Foods has catered?

Our amazing staff created an ice bar for the 2010 Olympics with giant seafood on an ice station. It was really something! We also recently offered both a burger bar and sandwich bar, an ice cream station, and a chef station for some of our corporate clients.

We’ve seen a lot of really fun, fresh trends in the catering industry lately such as food trucks and self-serve stations – like Truffles’ burger bar! What kind of trends do you see on the horizon for corporate catering in 2017?

A lot of small plates and tasting menus of multi-course meals. These offer not only some great food variety, but also allows our culinary team to play with seasonal food, creativity, and presentation. We’ve been staying away from big portions and breaking them into smaller portions with a highlight on presentation. This gives event guests a wider variety of things to try!

Truffles Fine Foods has set the bar high as an industry leader in Vancouver corporate catering. What do you feel sets Truffles apart from other caterers?

That’s easy: our team! We have gathered together a group of highly-skilled professionals who are passionate about what they do. This sets us apart from other companies because we’re always willing to go above and beyond. We offer personable customer service, menu flexibility,  we honour a lot of last-minute requests, and we’re totally in tune with our clients’ needs. For example, creating a vegetarian-friendly dish involves more than just removing meat from the equation. We’ll instead suggest and create dishes that include a variety of vegetables and flavours because we love knocking your guests’ socks off!

We’ll work with your budget and even offer services you need – rentals, liquor licenses, or even recommending other industry professionals that we can collaborate with to make sure your event is pulled off without a hitch!

Wedding

WEDDING CATERING: 10 QUESTIONS TO ASK YOUR CATERER

[spb_column width=”2/3″ el_position=”first”] [spb_single_image image=”2011″ image_size=”large” frame=”noframe” intro_animation=”none” full_width=”no” lightbox=”yes” link_target=”_self” width=”1/1″ el_position=”first last”] [blank_spacer height=”30px” width=”1/1″ el_position=”first last”] [spb_text_block pb_margin_bottom=”yes” pb_border_bottom=”no” width=”1/1″ el_position=”first last”]

Wedding catering involves much more than simply food. Before you hire your wedding caterer, ask these 10 questions to keep your budget in check and ensure you’re getting exactly what you need.

ONE OF THE MOST MEMORABLE PARTS of any celebration with loved ones is the food. Whether it’s a seated meal or trays of canapés, food is what draws people together, and wedding catering is no exception. When thoughtfully planning the various details of a wedding, it’s easy to become overwhelmed.

Truffles Fine Foods has put together 10 questions to ask your potential caterer before you sign a contract. While some aspects may not seem important in the early stages of planning, by arming yourself with information, you’ll potentially save yourself a lot of stress down the road.

1. What is included in each catering package?

Any experienced wedding catering company will be able to provide a variety of catering packages tailored to suit different budgets, tastes, and styles. Some packages include the bare necessities while others are jam-packed with no detail overlooked.

Wedding catering is about far more than the food your guests will indulge in: consider whether table linens, cutlery, dishes, and glassware are included. Other costs, such as cutting the cake, coffee or champagne service, gratuities, service charges, setting up, tearing down, and even garbage and recycling fees may be à la carte add-ons – which can quickly cause your budget to balloon.

2. What’s in the small print?

Like any contract, the agreement you make with your wedding caterer is no different. Read the fine print and make sure you understand fully what you’re signing up for. Have your wedding caterer review the contract with you and make sure they clarify the payment schedule (such as a deposit – ranging from 25% to 75% of the total cost), the refund and cancellation policies, and other important details such as extra charges and gratuities that may – or may not – be included.

3. Where will the food be prepared, and is an on-site kitchen facility necessary?

Depending on the style of meal you’re planning to serve, your caterer may prepare the food in advance and transport it to your venue, or they may prepare it on-site. Confirm whether or not the caterer requires an on-site kitchen facility. Because cooking at the venue may require that a makeshift kitchen be built either inside or outside, this often incurs a greater cost, so clarify this detail with your wedding caterer as you review the budget.

4. Can the menu be adapted to include vegetarian, vegan, gluten-free, or other dietary requirements?

What’s good for one guest may not be good for all guests, and vice versa. It’s very likely that a handful of your guests will have unique dietary requirements, and accommodating those requirements is seen as thoughtful and considerate. When inviting your guests, ask what may be necessary for them and then discuss those with your wedding caterer to decide what options will be available for those guests.

5. Where is your food sourced?

The source of your menu’s ingredients is about more than global impact. Where the ingredients come from can also affect your budget as some caterers will charge extra for premium ingredients. Hoping for local or seasonal items? They may be more affordable but, again, a caterer may charge extra for their efforts to source with specific vendors, so decide in advance if this is important to you and whether or not you’re willing to pay extra.

6. What kind of licenses and insurance will you arrange?

Few weddings are complete without cocktails and dancing. Keep in mind that licenses, such as for serving alcohol or SOCAN, are a legal requirement for weddings that are held in public venues. Other requirements may vary depending on your municipality, so ask your caterer if they can arrange these for you – or point you in the direction of someone who can. If your caterer is supplying alcoholic beverages, confirm that your wedding caterer has both a business license and liquor license.

7. Are meals for children and other wedding vendors included and, if not, how are they priced?

Your photographer, videographer, and DJ (and their assistants!) need to eat too, and it’s a common courtesy to offer each of them a hearty meal. If you’ve encouraged guests to bring their children, the munchkins also have to eat. Some caterers may charge a reduced per-plate price for wedding vendors and underage guests, so confirm this with your caterer before they provide you with an estimate.

8. What will the catering staff wear?

Black bowties at a luau-themed wedding would be as out-of-place as Hawaiian-print shirts at a formal affair. Ensure your wedding caterer’s staff is dressed appropriately for the style and ambiance of your wedding.

9. What do you suggest?

Wedding catering companies do more than simply cook food and prepare meal. Chefs are artists and many relish the opportunity to highlight signature dishes or offer their suggestions for perfect pairings. If you’re unsure about any aspect of your menu, your wedding caterer is your best resource because they’re working from a place of experience and knowledge.

One of the best and most fun parts of wedding planning is deciding on the menu, something most couples do with a tasting. When your wedding caterer does a tasting with you, it’s a great opportunity to discuss your menu options in person, decide on a possible menu theme, and discuss any potential food restrictions. Be sure to ask your caterer if the tasting is complimentary or if there’s a charge for two (which is often deducted from the final invoice).

10. How far in advance to I need to confirm guest numbers and menu details?

Confirm with your wedding caterer how much notice they require with a final guest tally, and then provide your guests with an RSVP date based on that conversation. Your caterer will also want to have all your menu details approved and finalized at the same time. This step is vital to the caterer to ensure that the freshest ingredients are available while allowing for ample time to source any hard-to-find items that may be on your menu.

PEMBERTON MUSIC FESTIVAL

Catering to the Pemberton Music Festival is no small feat, but our team was up for tackling the task!

In recent years, music festivals have become an essential element of summertime in British Columbia. Each sunny season our province welcomes big-name musical acts along with throngs of fans flocking to catch their favourite artists. Over the July 14th – 17th weekend, Pemberton was the place to be as tens of thousands of music fans ascended upon the sleepy mountain town. The stage was set to welcome The Killers, Snoop Dogg, Wolf Parade, Wintersleep, headliners Pearl Jam, and dozens more.

It takes an enormous crew to successfully pull off a four-day music festival, so Truffles Fine Foods was thrilled to provide food services at the Pemberton Music Festival. Our team went into preparation mode long before the first notes were ever played. Our team chopped, diced, and sliced to feed the crew members who were busy setting up stages, unloading trucks, and getting the site ready to welcome music fans.

Following more than a week of set-up and preparation, the four festival days saw a continuous flow of our fantastic food including:

[list]
[list_item icon=”ss-check”]BBQ Pulled Pork and Chicken[/list_item]
[list_item icon=”ss-check”]Vegetable Jambalya[/list_item]
[list_item icon=”ss-check”]Local pan-seared Albacore Tuna[/list_item]
[list_item icon=”ss-check”]Granny Smith Apple Pie with Vanilla Ice Cream[/list_item]
[list_item icon=”ss-check”]Kung Pao Chicken and other Asian-fusion dishes[/list_item]
[/list]

Each dinner during the show featured an incredible ice sculpture – including one of the Pemberton Music Festival logo!

Pemberton Music Festival

During the entire festival, our team fed over 1,000 people daily – at each of breakfast, lunch, and dinner! Doing so required 30 staff members, half of which were chefs while the other half were serving and cleaning up. Two massive food stations were constructed and maintained to display the feast, and no details were overlooked.

Whether it’s a corporate meeting for 10 or a cocktail party for 100, designing your event to be a unique experience for your guests can often be a challenge. Many different elements – and a lot of effort – go into coordinating all of the details. The importance of a memorable venue should never be underestimated. A number of Vancouver event venues can effectively set the stage and provide endless inspiration as to how your meeting, party, or wedding will unfold.

At Truffles Fine Foods, our dynamic catering team thrives on inventive collaborations with a number of Vancouver event venues that are nothing short of impressive. Let us take this opportunity to share with you some of our favourite places to consider for your next event.

VanDusen Garden Visitor Centre

Tucked away amongst the verdant oasis that is VanDusen Gardens, the Visitor Centre is a stunning architectural feat. Inside you’ll find several facility options, each with its own unique characteristics and style. The Peggy Gunn Woodland Hall (pictured above) is separated into Halls A & B, but may also be rented out together. The Visitor Centre also features a Great Hall with capacity for up to 250 for a cocktail party and 120 seated. The adjacent Great Lawn is a magnificently-designed outdoor rental space, perfect for large gatherings and events. By paying a flat rate you’ll also gain access to the entire garden – a truly incredible feature to this venue. And, of course, Truffles Fine Foods is on-site, adding simplicity to the planning process.

Science World Green Roof

For something truly out of this world, Science World’s Green Roof is sure to invoke awe amongst your friends, family, and colleagues. With expansive views of False Creek, your guests won’t soon forget an evening with the iconic Vancouver skyline as a backdrop. This space can accommodate a large group and included in all rentals is a tent on the Green Roof with seating space for up to 170 guests for a sit-down dinner.

Their flexible floorplans and professional team make planning a breeze.

The Pipe Shop

Flip your perspective on the city with a view from the North Shore at The Pipe Shop at Lonsdale Quay. This dramatic and awe-inspiring venue is a restored warehouse from the 1940s, boasting over 9,000 square feet! Floor-to-ceiling windows allow natural light to flood the space, while rough-hewn timber frames the interior. The Pipe Shop combines natural elements with an industrial feel to undoubtedly wow your guests. On sun-drenched evenings, wander outside for unparalleled views of downtown Vancouver.

Perfect for a wide variety of group functions, as many as 100 guests can be welcomed for a sit-down meal.

Heritage Hall

For a decidedly elegant yet understated event, Heritage Hall, in the heart of Mount Pleasant, is an unexpected gem. The space is defined by its opulence, featuring a neutral colour scheme, stained glass chandeliers, high ceilings, and large windows all in a truly rare and historic space. Up to 200 guests can be accommodated at a cocktail party, but the space is intimate enough for smaller gatherings.

Few places are as decidedly West Coast as the grounds of the UBC Botanical Gardens. VANDUSEN GARDEN STYLED SPRING WEDDING

[spb_column width=”2/3″ el_position=”first”] [spb_single_image image=”1261″ image_size=”large” frame=”noframe” intro_animation=”none” full_width=”no” lightbox=”yes” link_target=”_self” caption=”Photo Ⓒ Caroline Ross Photography Studio” width=”1/1″ el_position=”first last”] [blank_spacer height=”30px” width=”1/1″ el_position=”first last”] [spb_text_block pb_margin_bottom=”yes” pb_border_bottom=”no” width=”1/1″ el_position=”first last”]

This Styled Spring Wedding at VanDusen Botanical Garden Captures Both Whimsy and Romance

AS THE LAST DROPS OF SPRING RAIN evaporate and the first darling buds of May turn their petals towards a blue sky is when VanDusen Botanical Garden truly comes to life. Inspired by the delicate beauty of the season, Cristie Rosling at Umbrella Events planned and produced this styled spring wedding shoot at VanDusen Botanical Garden, while Vancouver-based photographer Caroline Ross captured every frame.

The catering team from Truffles Fine Foods was tasked with creating a feast that was both delicate in appearance but substantial in nature. Rustic platters were artistically piled with an enticing charcuterie selection. By contrast, bite-sized appetizers beautifully arranged on crisp white dishes offered inventive lighter fare.

Under the cotton candy-coloured canopy of a Benishidare Sakura cherry blossom, our bride nibbled Truffles’ sweet selection of handcrafted pastries and macarons in playful colours. Pantone’s colours of the year — rose quartz (pink) and serenity (blue) – were laced throughout the entire shoot and, specifically, in the desserts our team created.

Mismatched tables, antique jewels, and a dreamy five-tier wedding cake from The Cake and the Giraffe were key elements that added a whimsical character to this styled spring wedding. The sweeping greens and limitless canvas of colour at VanDusen Botanical Garden make it one of Vancouver’s most stunning and unique wedding venues. With the entire Truffles Fine Foods team on site, serving a memorable menu to your guests is a piece of (wedding) cake. Contact our team today to discuss how we can work with you to make your wedding like something out of a fairytale.
