Thankful For Thanksgiving Turkey

Muggy weather, crispness in the air, and the scent of pumpkin spice wafting about at our local coffee shops – the Autumn has finally arrived in Vancouver. Summer this year, it seems, came and went too quickly as per usual, and despite Vancouverites now having to endure weeks, if not months, of consecutive rainfall, there are plenty of things to look forward to in the Fall.

At Truffles Fine Foods, another transition takes place as the weather changes. We are catching the tail-end of the wedding season which means our culinary experts are busy putting together a new menu that is available for all! I’m not referring to a private catering event that you must book in order to sample our food, or even having to walk-in to one of our locations. No, I am talking about a carefully selected and crafted to-go dinner for Thanksgiving: our locally acclaimed and annual tradition, Turkey Dinner To Go.

Need some convincing? Apart from how amazing these set dinners are, this particular menu was a huge hit last year and was sold out in no time! This year’s menu features:

Sliced Boneless Turkey
Served with turkey gravy, stuffing, and cranberry sauce

Whipped Garlic Mashed Potatoes

Delectable Roasted Root Vegetables
Carrots, turnips, parsnips, and red onion

Creamy Autumn Pumpkin Pie
Served with cinnamon cream

Orders for this set menu is now being taken until October 10th, or until Truffles Fine Foods is fully booked. This four course meal feeds four guests and is priced at a reasonable $150 plus tax.

THERE ARE FEW THINGS WE’RE looking forward to as much as balmy summer days and crisp, refreshing cocktails. By shaking up the right combination of tantalizing tastes, a well-crafted cocktail can take any event from just alright to totally refined. For more than a decade the team at Truffles Fine Foods has prided itself on serving truly one-of-a-kind menus to its clientele, and now we’re excited to announce that we’ve teamed up with Lavish Liquid Event Bar Service to offer premium bar service.

AS WE PREPARE FOR THE SUMMER catering season, we asked our expert in-house mixologists three important questions about providing premium bar service to event guests, and what trends to look out for throughout 2017 and beyond.

1. Each year we see new trends with catering. What are some of your tips that are designed to “pack a punch” at the event bar and truly wow event guests?

As with food, you can’t beat using locally-sourced spirits, beers, and ingredients from right here in BC. We’ve got a very lively craft distilling scene with some fantastic offerings that have been bringing in awards from all over. We’re seeing a huge comeback for gin, being reinvented with citrus and earthy flavours that work incredibly well in a wide variety of cocktails. Another great idea to incorporate the local movement into your event’s premium bar service is by offering savoury cocktails using herbs from the local farmers’ market such as rosemary or basil.

2. Tell us three key things to keep in mind when providing premium bar service to event guests.

First of all, consider the food menu you’re planning to serve and make sure that the cocktails you choose will pair well. Work with your caterer and bartending staff to make sure that flavour harmony can be created. Second – and we can’t emphasize this enough – make a plan for the designated drivers and underage guests that will be attending. Providing non-alcoholic options for them will ensure that they also feel included. And lastly, don’t go overboard with the options. Too many choices on the cocktail menu can overwhelm guests. Pick a handful of great drinks that you know your guests will love, and make sure they’re made well.

3. What sets the premium bar service offered by Truffles and Lavish apart from others in the local industry?

Our catering team and mixologists are true experts, and they’re experienced enough to know what will work well, what will go with your event’s theme or menu, and which ingredients are required to ensure that your guests have a memorable time. TOM COLLINS RECIPE

Like us, our mixologists are looking forward to the summer months. While there’s always a place for something new and inventive, our team also believes in showcasing the classics because, with those, you can never go wrong. In honour of the sunny days ahead, we’re sharing our recipe for a refreshing Tom Collins.

In a shaker, combine:

– 2 oz gin (we like the Wallflower gin from Odd Society in East Vancouver)
– 1 oz fresh-squeezed lemon juice
– ½ oz simple syrup
– 3 oz chilled club soda

Shake and pour in a tall glass over ice, garnish with a slice of lemon and a Maraschino cherry.

Truffles Fine Foods has joined the Vancouver Foodster Cheesecake Challenge!

The Vancouver Foodster Cheesecake Challenge is officially underway and Truffles Fine Foods hopes to destroy the competition! Restaurants, bakeries, and cafés from across Vancouver are competing for the title of Best Cheesecake in the city, and it’s up to you – our customers – to decide who wins.

The pastry team at Truffles Fine Foods is confident in its famous berry cheesecake-in-a-jar dish. With three tempting layers, it’s the perfect triple threat. A graham crumb base is smothered in sweet, creamy cheesecake filling, followed by a sumptuous topping of fresh berries, all served in a portable and charming latch-lid jar.

Running from April 14th until May 8th, you’ve got plenty of time to eat as many berry cheesecakes-in-a-jar while getting your votes in. When deciding on the winning cheesecake, look for originality, creativity, price, value, unique characteristics and, most importantly, taste! CANADIAN CANCER SOCIETY’S DAFFODIL MONTH

Truffles Fine Foods is proud to support the Canadian Cancer Society’s Daffodil Month

Throughout the month of April, Truffles Fine Foods is proud to once again support the Canadian Cancer Society’s Daffodil Month initiative. By supporting Daffodil Month, we’re helping to raise funds to help those living with cancer while also supporting their families. The Truffles team’s reason is simple: “Cancer impacts everyone in our community, so supporting this cause is something we really care for,” said Fanny Dufour, our Marketing & Business Development Manager.

2016 is the fourth year Truffles has partnered with the Canadian Cancer Society, and to honour that our pastry chef has created a delectable Daffodil Shortbread Cookie. Sugary sweet with tangy lemon and a hint of orange in the buttercream, these cookies are a tasty way to let our customers lend their support. Selling for $3 each before tax, $1 from the sale of each cookie will go directly to the Canadian Cancer Society.

The cookies will be available at our café locations in North Vancouver, at VanDusen Gardens, and in downtown Vancouver throughout the month of April. Symbolic of strength and courage, wearing a daffodil pin is an easy way to show you care. When you stop by one of our locations, be sure to also pick up a daffodil pin with all funds from the sale of pins going directly to the Canadian Cancer Society.
